Bricken Oven has opened up in place of what was Litti/Litti Chokha at the same place food court. It supposedly sells wood fried pizzas.
After a long tiring work out, i headed to BO. This was pre decided since afternoon and hence did not bother to change the plan.
After going through their menu online, i figured the most decadent would be the 5 cheese pizza which includes the likes of smoked Gouda, cheddar, mozzarella, ricotta and grana padano.
The ordering process was simple as it was only 1 pizza to order.
There is nothing called ambiance in existence at the same place food court, so dont go expecting that. The wifi is also not functional. The only thing saving grace there is probably the subway and the few TVs they have which were telecasting the kabaddi league.
When i ordered for the 5 cheese, i was asked if i was interested in a tomato or a ricotta base. I said cheesier the better, but it did not strike that ricotta might make the pizza a lot more creamier than what i would have liked. Also i saw the guy pour it out of a rather precisely cut amul fresh cream tetra pack and then i had my doubts, nevertheless i continued with the order.
i saw the guy distribute 5 types of cheese on the base after layering the ricotta base, and i moved to the tables.
15 mins later a pizza is put in front of me - completely white. I was thinking to my self, isnt it atleast supposed to be golden some where ! it was too much of a color contrast from expectation to reality
The first couple of bites of the pizza made me realize the wrong choice of base sauce. Had i chosen tomato, it would have given some contrasting flavor - hopefully.
The entire pizza is filling for 1 person, may not be for 2. There is hardly any depth of flavor to the entire pizza, partly because of the supposed ricotta base but also the fact that there was no sharp taste of the cheddar or the smokey/salty flavor of the gouda . I haven't eaten padano as a singular cheese but from what i read it should taste a little sweet - a flavor that was missing.
The mozzarella was not evenly distributed either. It was sparsely used because only a few pieces were stringy when i pulled them out.
What i expected was a golden brown crust with distinctive taste of atleast 3 of the 5 cheeses used. An ask of a very tall order i suppose. What ide like to understand is how can using 5 cheese properly, make a pizza rather tasteless !
Although the pizza was filling, the inability to taste atleast 3 of them was disappointing. May be 1 more try is warranted for a different pizza and may be the mac n cheese ...someday though !
